Butternut Squash and Goat Cheese Pizza.
This dinner was inspired by one of my favorite food accounts on Instagram, Inspiralized. Although I did not spiralize my squash you definitely can. I just love the combination of the sweet roasted butternut squash with creamy goat cheese and crispy sage. Of course, I added lots of red pepper flakes for that sweet and spicy taste.
Tonight, I used whole wheat crust from the fridge section of Trader Joe's. Unfortunately, Lafayette does not have a Trader Joe's. I also have made this with store bought pre-made crust from Albertsons.
Prep step
Dice a medium sized butternut squash and season with s&p, nutmeg, and olive oil. Roast on a sheet pan at 375F for 25-35 minutes. It's okay if it's a little al dente because it will cook a little more on the pizza.
Step 1
Roll out your dough on a floured surface and coat with olive oil, minced garlic, and garlic powder.
Step 2
Add the butternut squash and goat cheese.
Step 3
Add shredded mozzerela cheese.
Step 4
Add fresh sage & red pepper flakes.
Step 5
Bake according to the crust directions until you have a nice crispy crust and melted cheese. Optional: Turn the broiler on for a few minutes watching closely not to burn your pizza. Enjoy!
