Kung Pao Chickpeas
Hi Friends! I am starting a new series on the blog. For the next 4 weeks I will be releasing a new Meatless Monday recipe. Up this week, a meatless spin on Kung Pao Chicken.
Confession: I love Panda Express. I especially love their Kung Pao Chicken. I decided to attempt a healthier, meatless version of this dish. I actually had everything on hand for this recipe and it came together in under 30 minutes.
This recipe is SO easy that ANYONE can make it. Clean up is also a breeze because you only need a cutting board and a large skillet. It also is great for meal prep. I will be eating a couple of servings for lunch this week!.
