Black Bean Dip

Hi! I am coming at you with this delicious crowd please easy peasy black bean dip. The perfect dip to bring to any get together, and at this time great for all of your tailgate/football watching parties.

I made this dip twice this weekend! Perfect on each occasion served with chips, but if you want to lighten it up serve it with cucumbers or carrots.

Here is the deal with the seasonings that I used… I had them all on hand. If you aren’t someone whose spice cabinet looks like you need a professional organizer to intervene. Use what you have, be creative or just use a taco seasoning packet.

Black Bean Dip

ingredients

  • 1 can low sodium or no salt added black beans

  • 1 jalapeno, seeds removed and cut in half

  • 1 yellow bell pepper, seeds removed and sliced

  • 1/2 large onion sliced

  • 1 big handful of cilantro (leaves & stems)

  • 2 tbsp greek yogurt

  • 1/4 lime

  • 1-2 tbsp olive oil

  • 1/4 tsp each of onion powder, coriander, chili powder, ground cumin, smoked paprika, Trader Joe’s chili lime seasoning

  • 1/2 tsp Cajun Bait Garlic Blend (from my Cajun Crate Box)

  • water for loosening if needed

directions

  • Preheat oven to 425F & line a cookie sheet with parchment paper

  • Place jalapeno, bell pepper, and onion on parchment lined cookie sheet. Drizzle with olive oil and all of the above mentioned seasonings

  • Bake for 15-20 minutes.

  • While the vegetables are in the oven, heat beans on low in a medium sized sauce pan.

  • Once vegetables are done, add to black beans and turn off heat. Once slightly cooled (approx 15 min) carefully add to bender or food processor along with greek yogurt, cilantro, and juice from 1/4 lime.

  • Blend together using a spatula as needed to push down on ingredients from the side of blender. Add water as needed to get to the consistency you prefer.

  • Serve warm with chips or veggies!

There you go! A delicious, yet easy dip that is sure to be a crowd-pleaser.
