Leftover Thanksgiving Sandwiches
Let me paint a picture for you… It’s Black Friday and you look in the fridge and still have SO MUCH TURKEY! If you are my father in law you are making a turkey gumbo. Which is delicious by the way, but it takes a while and some effort. If we are all being honest with ourselves, we do not want to put in a lot of effort on the day after Thanksgiving when we are all still slightly waking up from our turkey comas.
Soooo what should we make? Well I also bet there is some leftover cranberry sauce somewhere. Let’s be honest we all bash it, but it’s always included in the spread. Would it be Thanksgiving without it?
Okay okay, I am getting to my point! We should all make turkey sandwiches, but not just any turkey sandwich… The most delicious (not nutritious) turkey sandwich filled with chunks of leftover turkey, canned cranberry, and maybe a stick (or 2) of butter!
Now I am not adding exact measurements to this recipe, because everyone has different amounts leftover. So I am giving you a template to create a great Black Friday lunch or even a friendsgiving pot luck dish. And if you want to add another leftover to the sandwich (did you say there is stuffing in the fridge?)- this is the no judgement zone!
Leftover Thanksgiving Sandwiches
Ingredients
Rolls (I used Kings Hawaiian Rolls)
Leftover Turkey
Leftover Cranberry Sauce
Swiss cheese (or leftover cheese from your charcuterie appetizer)
1-2 sticks of melted butter
1 packet of zesty Italian Dressing mix
Directions
Preheat oven to 350F
Spray a casserole dish with non stick spray
Assemble Sandwiches- cranberry, swiss, turkey. (note: I didn’t use any condiments -because #butter, but if you want to add them here!)
Add the Italian packet to melted butter (I used 2 sticks for 32 sandwiches)
Bake covered with foil for 15 minutes and then uncovered for 15 more minutes. Check often, making sure bottoms are not burning.
