the Legit EVERYTHING breakfast casserole
Hey y’all! I think I have found my new favorite time to hang out with friends— Saturday Mornings! Let’s be real… finding a babysitter isn’t always the easiest on a Saturday night. Let’s turn Saturday mornings (with mimosas) into the new Saturday Night!
Now that you’ve called up your friends to hang on a Saturday morning, you need to create the menu. May I suggest this AHHHHMAZING breakfast casserole.
the Legit EVERYTHING breakfast casserole
Ingredients
1 loaf of everything but the bagel french bread (day or 2 old is best) . I found this at Wal Mart. Cut into pieces
2 tomatoes, diced
1 onion, thinly sliced
1/4 cup fresh basil, chopped
16 oz breakfast sausage
1 package of frozen spinach, defrosted
2 tbsp butter
3 cups milk
9 eggs
2 cups shredded cheddar cheese
8oz shredded parmesean cheese
1 block cream cheese
Directions
In a skillet cook your breakfast sausage. Once done, dump in a large bowl.
In the same skillet, sauté onions and butter. Once done, dump in the large bowl.
Ring out defrosted spinach in a rag. Add to the large bowl.
Add bread, tomatoes, basil, cheddar, and parmeasan cheese to the large bowl. Save a little cheese to top before baking. Give it a big stir!
In a separate bowl whisk together milk and eggs.
Spray 1-2 pyrex dishes or tin foil pans with non stick spray.
Transfer ingredients from the large bowl (the one with the bread) into the baking dishes.
Pour egg milk mixture on top of bread mixture.
Break small pieces of cream cheese and stuff into the casserole.
This needs to soak for a minimum of 1 hour, but I let mine soak overnight in the fridge.
Just prior to baking sprinkle with the saved cheese.
Bake at 400F for 15 minutes. Then decrease to 350F for 35-45 minutes.
Enjoy with friends & mimosas!
