Catfish Wedge Salad Bites

Hi! With memorial day weekend approaching I wanted to create an appetizer the entire family can enjoy & make together! These Catfish Wedge Salad Bites come together in a jiff & the kiddos can even help assemble! I oven fry my US Catfish, so no worries about hot grease in the kitchen. Catfish Wedge Salad Bites
Ingredients
For the catfish:
2.5 c yellow cornmeal
1 c flour
1tsp each cayenne, onion powder, garlic powder, black pepper
1 tbsp salt
3 eggs
1 tbsp yellow mustard
1 inch pieces of US Catfish (I used 4 filets, which made about 18 pieces)
Non Stick Spray (I use avocado oil spray)
For the wedge:
Iceberg lettuce cut into small chunks
Grape Tomatoes
Purple onion, largely diced
Tartar Sauce
Wooden Kabob Skewers- cut in half
Directions
Preheat oven to 425F. Line a cookie sheet with aluminum foil & place a cookie rack on top. Spray with non-stick spray (I use avocado oil spray).
Mix Dry Catfish ingredients in one bowl & wet in another.
Dip Catfish pieces into the wet ingredients, then dry, then wet, then dry. Place on cookie rack.
Spray top of catfish with avocado oil. Bake Catfish in oven for 20-25 minutes or until golden brown.
Assemble skewers in the following order: Lettuce, Tomato, Catfish, Onion, & finish with a drizzle of tartar sauce!
