The BEST Pasta Salad
Hellooooo! I have been slacking for you over here on the blog, but do not fear I am about to share the BEST pasta salad recipe with y’all. It is perfect for Spring & Summer days. Especially for Summer days on the beach!
Now, the only thing not easy about this recipe is…. living somewhere without a Trader Joe’s (aka Lafayette). I have had a friend order the corn salsa via amazon, but it is much more expensive that way, BUMMER! I usually grab a few jars when I am in Baton Rouge and just keep them in the pantry.
Also, I am not 100% sure who to give recipe cred to here. My mom makes it, but she may have gotten the idea from my future SIL?! IDK, but Mom/Rebecca this recipe is the bomb & thanks for sharing it with me!
Summer Pasta Salad
Ingredients
1/2 Jar Trader Joe’s Corn & Chile Tomato-less corn salsa (Amazon Link here- but way cheaper at the store)
1/4 cup julienne cut sun-dried tomatoes ( I find these in the produce section in a jar)
6 oz feta cheese crumbles
1 package of bow-tie noodles
salt & pepper to taste
Preparation
Boil noodles in salted water
Combine all ingredients together in a bowl. Place in the fridge for at least an hour
Serve chilled
Note: You may need to add more salad dressing if it seems to dry for your liking!
I hope that you enjoy this delicious pasta salad. Always remember, you can change it up and make it your own! I have swapped the sun-dried tomatoes for artichokes and also have added chicken to make it more of a main course. YOU DO YOU!
