Tomato Basil Soup

Hi! It’s SOUP SEASON! whoop whoop. I have a delicious & easy tomato basil soup that is also healthy for you. I prefer to serve this soup with a melty grilled cheese sandwich. It would be the perfect pair to a salad, like this Panzanella Salad or just some Semi Homemade Focaccia Bread.

Things that come in handy for this recipe: sheet pan, sauce pan, immersion blender, microplane, & fresh cracked pepper grinder. These are affiliate links, thanks for the support!

Tomato Basil Soup

Ingredients

  • 3 lbs of tomatoes (I used Roma) halved or quartered and semi cored

  • ½ onion, finely chopped

  • 2 cloves garlic, chopped

  • 1/2 cup fresh basil

  • 2.5 cup chicken or vegetable broth

  • ½ cup milk

  • Freshly grated parmesan cheese – as much as your heart desires

  • 2-3 tbsp olive oil

  • Salt & Pepper to taste

Directions

  1. Preheat oven to 375F

  2. Place tomatoes on a parchment lined cookie sheet. Drizzle them with olive oil & season with salt and pepper. Bake for 30-40 minutes.

  3. In a large sauce pan or soup crock saute onions and garlic with olive oil, s&p

  4. Remove tomatoes and add them to onion garlic mixture.

  5. Add in 2.5 cups of broth & ½ cup fresh basil to your pot. Bring to a boil, then let simmer for at least 30 minutes. You may want to add 1 extra cup of liquid here depending on how much soup you want to make. You can add more broth or just up to a cup of water.

  6. Once at least 30 minutes has passed use an immersion blender or stand blender to blend tomato mixture.

  7. Add in milk and parmesan cheese. Stir and cook on low for at least another 10-15 minutes.

  8. Serve warm topped with more cheese & fresh cracked pepper.

*Note: taste and season with salt and pepper throughout the cooking process as needed.
