The softest & most delicious lactation cookies
Hey hey! So I am a mom now & have no time for long recipe introductions. Seriously breast feeding is all I have time to do, seriously! Anyways, here is a delicious lactation cookie recipe taste tested by a few of my momma friends. Oh, and also by Petey! He loves them. Tag me on Instagram if you make them @thevintagefork .
I feel like the name is still a work in progress. It is my take on a gingerbread cookie with cane syrup, but I also used oats. The oats definitely shine through, so is it an oatmeal cookie?! IDK! Leave name recs in the comments!
Sea Salt Oatmeal Lactation Cookies
Ingredients
2 cups flour
1/2 cup of oats (ground them in a food processor)
1 tsp cinnamon
1 tsp baking soda
3 tbsp brewers yeast
½ tsp baking powder
½ tsp salt
1 cup butter (2 sticks, softened)
1 cup white sugar
½ cup brown sugar
2 eggs
1 tbsp water
¼ cup Steens Cane Syrup (af link)
flaky sea salt for topping (optional, but so good)
Directions
Preheat oven to 375F
Take first 7 ingredients and whisk in a bowl, set aside
Beat butter, white, & brown sugar until fluffy. Beat in eggs, water, and Steens Cane Syrup (af link)
Add dry ingredients 1 cup at a time to sugar/butter mixture until well combined
Let cookie dough cool in fridge for 30 minutes (optional). Roll into balls and bake for 10 minutes. Top with flaky sea salt!
