Dipped Mocha Chocolate Chip Cookies
Sooooo I bought the Foodnetwork Magazine for a little weekend reading and now I am on a mission to bake EVERY. SINGLE. COOKIE. recipe in it.... Not really, but they all look SO good so I couldn't help but try out a few.
This coffee flavored cookie definitely has a kick and with the espresso beans + espresso powder it is sure to give you a good buzz. I think it is perfect to pack for a road trip or to bring on a girls weekend!
I had a difficult time finding the dark chocolate covered espresso beans, but I eventually found them at the TJ Maxx checkout counter for $2.99. You can also get them at World Market and if you're not doing this last minute check out Amazon as well.
I like to use a cookie scoop so that my cookies are consistent in size.
Once your cookies have cooled you will dip them in your chocolate espresso sauce. Transferring it into a coffee mug made it easier to cover half of the cookie. Be sure to let them dry all the way before packaging.
These cookies can be a little coffee forward so if you want to tone it down just a tad I would recommend omiting the espresso powder in the dough, but still using the espresso beans!
