Cajun Street Corn
Hello! Anyone know what weekend it is?! Yes, Father’s Day! But that’s not the answer I’m looking for... it’s the 33rd annual La Corn Festival!
Corn is my favorite food & my hometown just so happens to be the corn capital of the world- Bunkie, La.
Fun fact: I’ve won both the corn eating & corn shucking contest on more than one occasion.
We recently bought not 1, but 2 sacks of corn from my 13 year old nephew. He sneakily asked both of us separately and also Petey thought a sack of corn = a dozen of corn! I knew better, but you should have seen his face when he went to unload 8 dozen from the back of my vehicle!!!
Today I’m sharing my take on street corn, Cajun style!
Cajun Street Corn
Ingredients
- 4 ears of sweet corn
- 2 tbsp mayo (or more 🤫)
- 1/2 - 1 tsp Cajun seasoning (Tony’s, Slap ya Mamma, whatever you have on hand!)
- 1/2 tsp garlic powder
- 4 tbsp shredded parmesan, divided
- cilantro
- 1 lime
Directions
- Boil or Grill your ears of corn
- Mix together mayo, Cajun seasoning, garlic powder, 2 tbsp shredded parmesan
- Once corn is finished cooking and still hot, slather the above mixture on each ear
- Top with cilantro, a squeeze of a lime, more parmesan cheese, & seasoning if desired!
