August is National Catfish Month, so I am sharing a delicious (and easy) catfish recipe! This grilling recipe is perfect for end of summer nights spent outside with family & friends. I made a tutorial video for this recipe on Instagram, click here.

Foil Packet Catfish
Ingredients (4 packets)
8 pieces of U.S. Farm-Raised Catfish
1 yellow bell pepper, 1 red bell pepper, 1 yellow onion: all thinly sliced
Small tomatoes, such a cherry or grape cut in half
4 tsp Cajun seasoning
4 tbsp butter
Aluminum Foil
Cooking Spray
Directions
For each packet layer 2 sheets of aluminum foil and spray with cooking spray.
Assemble each packet with 2 pieces of catfish, peppers, onions, tomatoes, 1 tbsp butter, & 1 tsp Cajun seasoning. Close foil packet.
Place packet on the grill over medium heat (around 300F) for 18-22 minutes.
Remove from grill and enjoy with a delicious Summer salad!
