Smothered Pork Chops with Rice & Gravy
Ingredients:
For the Pork Chops:
3lbs bone in thin pork chops.
2-4 tbsp all purpose flour.
Cajun Seasoning, to taste.
2-3 tbsp olive oil.
8 oz Cajun trinity (dice onion, celery, & bell pepper).
2 cups low sodium chicken broth
1 can mushroom steak sauce, optional but I highly recommend.
For the Rice:
2 cups water.
1 tsp olive oil.
1 tbsp butter.
2 large pinches of kosher salt.
Directions:
For the Pork Chops:
Lightly flour & season your pork chops on both sides.
Heat oil in a Magnolite or Dutch Oven, add in your pork chops, and brown on each side. Approx 3 minutes per side. Working in batches if needed. Remove once both sides are browned.
Add in your Cajun Trinity and sauté for about 3-5 minutes. Add more Cajun seasoning if desired.
Once trinity is softened, add in chicken broth & mushroom steak sauce. Stir until combined.
Add your pork chops back in and bring to a boil. Once boiling, cover and lower heat. Simmer & cook your rice.
For the rice:
Heat olive oil in a sauce pan.
Add in 1 cup of 4 Sisters Long Grain Organic White Rice and “toast” it for 1-2 minutes.
Add in 2 cups water, salt, & butter. Bring to a boil.
Once boiling, add lid and turn heat to simmer. Set a 20 minute timer.
After 20 minutes, fluff with a fork, & enjoy with grave and pork chops.
*** you can also follow the instructions on the bag. I have done this too and it comes out perfect!
As always, let me know if you make this delicious meal! It is the perfect easy weeknight cajun recipe!
Happy Eating,
Liz
