Catfish Hush Puppies

Hey y’all! Happy Let’s Make Tuesday. Tonight we are making the most epic Catfish Hush Puppies using U.S. Farm-Raised Catfish. These are perfect for gameday celebrations whether you are tailgating at the stadium or watching the big game from your couch. I recently made them for our season opener & they were gone in minutes!
Catfish Hush Puppies
Ingredients:
3-5 pieces of U.S. Farm-Raised Catfish.
1, 8.5oz box cornbread mix.
2 tbsp grated onion.
1 jalapeno, diced (deseeded if desired).
½ cup whole kernel canned corn, drained.
1 egg.
⅓ cup milk.
¼ cup flour, plus 2 tbsp if needed.
1 tsp cajun seasoning.
Oil for frying.
Directions:
In a food processor, blend your catfish pieces and set aside.
Mix together cornbread mix, grated onion, jalapeno, corn, egg, milk, ¼ cup flour, & cajun seasoning.
Fold in catfish and based on consistency add in extra flour if needed. ( I ended up adding 1 extra tbsp of flour).
Heat oil in a cast iron skillet to 375F.
Using a teaspoon sized cookie scoop, drop batter into oil for 3-5 minutes flipping halfway through. They should be golden brown before removing to a paper towel to drain.
